I was inspired to create this mix as something to curb the daily, afternoon attack of the hunger pangs. It’s 3:00 pm, and all the sudden HUNGRY! Can anyone else relate? This mix hits the spot every time. If you crave something sweeter, check out these granola bars!
I found all of these ingredients in the bulk section of my local store, even the crazy ones like goji berries and buckwheat groats. Trust me, you’ll be glad you included them. Goji berries are basically superfood skittles, so I’m going to leave that right there.
Makes 2-3 servings
1/2 cup of raw walnuts
1/4 cup shredded coconut
1/3 cup roasted, salted pistachios
1/4 cup dried apricots
1/4 cup goji berries
2 tablespoons of cacao nibs (or dark chocolate chips)
1 tablespoon chia seeds
1-2 tablespoons buckwheat groats (I add these for extra crunch)
Mix together in a bowl.
